Air fryer carrot cake is the ‘most delicious’ and so quick


An isn’t the first appliance that springs to mind when it comes to , but it’s a great option for some recipes.

According to Candice Bannister, baking expert and founder of Candy’s Cupcakes, one of those is carrot cake.

The popular teatime treat is loved for its moist texture, naturally sweet sponge and delicious creamy frosting.

Speaking exclusively to Express.co.uk, Candice said: “Carrot cakes can often appear more complicated than they are, as they have a variety of different ingredients.

“However, just by using these minimal ingredients and your air fryer you can make the most delicious carrot cake, without all the fuss, in no time at all.”

Method

Preheat your air fryer to 160C for about five minutes before making a start on the cake mixture.

In a large mixing bowl, combine the grated carrots, self-raising flour, light brown sugar, ground cinnamon, ground nutmeg, eggs, vegetable oil, and a pinch of salt.

Mix everything well until combined, but avoid using an electric whisk so as not to overwork the batter. Next, grease a small cake tin, suitable for the air fryer, with cooking spray or oil.

Pour the cake batter into the greased cake tin, making sure it is spread out evenly. Place the cake tin into the preheated air fryer and cook at 160C for 25-30 minutes.

Once cooked, remove the cake from the air fryer and let it cool in the pan for a few minutes, then transfer it to a wire rack to cool completely.

Once the cake has cooled, frost it with cream cheese frosting and sprinkle chopped nuts on top. Slice the carrot cake into wedges and serve.
