
A Michelin Star chef has made the "incredibly difficult decision" to close his fried chicken restaurant in a major UK city.
Alex Bond closed Mollis in Nottingham, which is known for its far-out flavours of fried chicken, hip hop and soft-serve ice cream, which was opened at the end of 2022.
Bond, who is also behind the renowned Alchemilla, said in a statement posted to social media on Friday (April 24), that he will be closing the Derby Road restaurant after a final service on May 16. "This has been one of the hardest things I’ve had to do," the statement posted on Facebook also read.

"Mollis has been more than just a project, it’s been a space to create some insane flavours, to push ideas, and to build something with real personality. I’m so proud of our amazing team and all the time and effort they have put in.
"From the food to the energy, it’s always come from a genuine place, and that’s something I’ll always be proud of."
Mollis opened with the help of £100,000 contributed through an online fundraiser, with the menu boasting 'the best-fried chicken you've ever had'.
Options include Gochujang buffalo and blue cheese, pineapple or Chimochurri with fresh herbs, charcoal butter with quince chutney or sea buckthorn nahm jim, fermented cabbage.
It is also known for its adventurous cocktails which are made up of ingredients such as eucalyptus, pear and woodruff with liquorice, or tomato, lovage, strawberry with chamomile and elderberry, juniper, beetroot and black rose.
The restaurant, which is draped in local hip hop-inspired street art, also collaborated with the Saltbox venue next to the Motorpoint Arena for a kitchen three-month takeover in summer 2024.
In his statement, Bond asked people to visit Mollis one last time before it's closure on May 16, adding: "To everyone who’s come down, supported us, shared a meal, or sank a cocktail, thank you.
"Your support means the world. We’d love to see as many of you as possible before we close the doors. Let’s give it the send off it deserves."
Alex earned a Michelin star in 2019, when The Good Food Guide also named him as its Chef to Watch.
