Sausage and mash potato pie is the ‘ultimate feel-good family recipe’ to make for dinner


Sausages and mash is a beloved British dish that is easy to make and incredibly comforting to eat, but there is an easy way to make this classic meal even better.

Jamie Oliver has shared his “ultimate feel-good family recipe” for turning sausages and mash into a pie to make a hearty dinner to warm you up on a cold evening.

In a video online, Jamie said: “If you love sausage and mash then this could be a new family favourite in your home.”

This is the perfect dinner to make in autumn as it is utterly delicious but also incredibly simple to make as it only takes roughly 20 minutes to prepare before it goes in the oven.

It is a great cosy family dinner that is sure to impress both adults and children alike, and now in autumn is the best time to cook this fulfilling meal.

Method 

To begin, preheat the oven to 200C.

Wash the potatoes, peel them and cut them into even-sized pieces. Place the potato chunks in a large pan of salted and leave them to boil for 15 minutes or until tender.

Meanwhile, add one tablespoon of olive oil to the casserole pan. Place them on the stove on a medium heat, then add the sausages and cook them until they have browned.

Trim the leeks, slice lengthways and then chop into one-centimeter chunks. Then peel and chop the apples into one-centimeter chunks.

Once the sausages are golden brown remove them from the pan and set aside on a plate for now.

Place the leeks and apple chunks into the pan, then add most of the thyme. Add a splash of water to the pan, cover with a lid and cook for 20 minutes until softened.

When the potatoes are ready drain them, mash them with two tablespoons of flour and then season with salt and pepper.

Lightly rub a baking dish with oil, then add two-thirds of the mashed potatoes to the dish. Spread the mashed potatoes until the base and sides of the dish are covered.

Add two tablespoons of flour to the leek and apple mixture, then slowly stir in the milk and mustard to form a sauce.

Let the leek and apple sauce mixture simmer for five minutes until it is thick and creamy.

Slice the sausages into one-centimeter slices and stir them into the pan with the apple and leek mixture.

Spoon the sausage, apple and leek mixture into the mashed potato dish and make sure they are evenly spread.

Add the remaining mashed potato to a sheet of baking paper, and make sure it is just bigger than the dish to form a cover.

Flip the mashed potato baking paper over the dish, peel off the paper and brush one tablespoon of oil on top of the mashed potatoes.

Cook the sausage and mash potato pie in the oven for 40 minutes or until the potato top is crispy and golden.

Five minutes before taking it out of the oven sprinkle the remaining thyme leaves on top, then your tasty sausage and mash potato pie is ready to serve.
