How to make roast potatoes crispy in the oven using bicarbonate of soda


Roast potatoes that are crispy and golden on the outside and fluffy on the inside always manage to steal the show, regardless of what the main is.

A popular chef and content creator has shared his foolproof technique that guarantees perfectly golden spuds in just 50 minutes.

With one key, and perhaps unexpected, ingredient from your kitchen cupboard, this side dish is destined to be a crowd-pleaser.

London-based chef and author Sam Stern divulged his process on his TikTok account, @samsterncooks, claiming they were “how to make the best roast potatoes you’ll ever eat”.

What you’ll need for this recipe is:

  • Potatoes
  • A chicken stock cube
  • Olive oil
  • Clarified butter
  • Garlic
  • Rosemary
  • Thyme
  • Salt
  • Pepper

Accompanying his voiceover with a video of the process, Sam explained: “Add your potatoes to cold water with salt, bicarbonate of soda, and par-boil.” He then parboils the potatoes until a sharp knife can slide into them easily.

“Meanwhile,” he explained: “take a chicken stock cube add oil and combine.” Then, “pour clarified butter onto a baking tray.

“Place into the oven until hot and add the potatoes, garlic, rosemary, thyme, the stock oil and season. Mix together.”

“Roast for 25 minutes, turn and roast for 25 more minutes,” Sam says, and then the delicious crispy potatoes are done.

“They look like the best roasters,” one commenter pointed out.
