Italian restaurant chain shares delicious spaghetti puttanesca recipe

San Carlo group has an expansive portfolio of restaurants worldwide, with some of the most famous UK locations including Chichetti in Knightsbridge, London.

The chain restaurant boasts a prime location just a stone’s throw away from Harrods and is renowned for its Venetian-style tapas menu.

Described as an all-day dining concept, hungry visitors can enjoy a variety of dishes ranging from seafood and pizza to pasta, including this delicious spaghetti puttanesca.

Puttanesca sauce is made from simple pantry staples including canned tomatoes, garlic, olives, and capers, but delivers a fresh-tasting result.

Now, fans of the San Carlo group restaurants can recreate the chain’s trademark recipe at home with their exclusive formula.

Method

Start by adding the oil to a large non-stick pan and set it over medium-low heat on the hob.

Add the finely chopped garlic and chilli flakes then saute for around two minutes.

Pour in the can of chopped tomatoes and add the capers, then bring everything to a gentle simmer. Leave to cook uncovered for 15 minutes then season to taste.

Add the olives and cook for a further five minutes. Meanwhile, bring a large pot of salted water to a boil (or fill it with boiled kettle water), and cook the spaghetti according to packet instructions.

When cooked to a slightly al-dente texture, drain the pasta and toss with the sauce ingredients in the frying pan. Add chopped parsley to serve.

While the dish is perfect on its own, it pairs well with seafood; such as mussels or salmon, as well as succulent chicken.
