Jamie Oliver’s fluffy flourless pancakes only take 10 minutes to make and are classed as “not too tricky” by the chef.
When made as per indications, this recipe yields two servings, so you can adapt it accordingly.
Sharing the recipe on his official website, the chef said: “These simple breakfast pancakes can be made without flour – throw the ingredients in a blender, whiz it up and fry in a pan for breakfast in no time. Easy!”
Ingredients
100g porridge oats
100g cottage cheese
Two large free-range eggs
One tsp baking powder
olive oil or unsalted butter, for frying
Topping options:
One avocado
Two free-range eggs
chilli sauce
Instructions
Combine the oats, cottage cheese, two eggs, and baking powder in a blender. Blend until smooth, adding a tiny pinch of sea salt and a splash of water if the mixture is too thick.
Heat a large non-stick frying pan over medium-high heat with a small amount of oil or a small knob of butter.
Pour spoonfuls of the batter into the pan, cooking in batches if necessary. Fry each side for about two minutes, or until golden brown.
Serve the pancakes topped with sliced avocado, a fried egg, and chilli sauce if desired, or customise with your favourite toppings.
