How to make Jamie Oliver’s butter chicken recipe – the ‘ultimate comfort meal’


Autumn is now here which means most of us are looking for cosy dinner recipes to warm us up after a long day, and there’s nothing more comforting than a curry.

Jamie Oliver’s butter chicken recipe is almost effortless to put together as it requires simple ingredients with everything cooked in the same pan to save time on the washing up later.

The famous chef first shared this mouthwatering dish in his cookbook ‘7 Ways’ but it can also be found on his website.

He said: “Creamy, spicy, rich — butter chicken is the ultimate comfort meal. And it’s so easy to throw together.”

This is a warming dinner that is perfect to make for anyone who wants something hearty to eat that is guaranteed to fill them up after a long day.

Method

Slice the chillies, deseed them and then place them in a large frying pan on a high heat. Add the tomatoes to the pan as well and cook until they are charred all over.

Once the chillies and tomatoes are charred, remove them from the pan and place on a board.

Meanwhile, make a marinade by peeling the garlic and ginger, then grate them in a bowl. Add most of the garam masala, and one tablespoon of yoghurt, then season with salt and pepper.

Cut the chicken into one-centimetre pieces and score each piece, then massage the chicken with the marinade.

Place the chillies and tomatoes back into the pan along with the chicken pieces on a medium heat, and add half a tablespoon of olive oil.

Cook and char the chicken, chillies and tomatoes for 10 minutes, but make sure to turn halfway through. Pinch and discard the tomato skins and chop up the chillies.

Remove the chicken from the pan. Add the chase butter and pour 250ml of boiling water from the kettle into the pan.

Stir everything together to pick up any sticky bits at the bottom of the pan. Then let the durry bubble for two minutes until it starts to thicken.

Return the chicken pieces to the pan and leave the curry to simmer for two more minutes or until the chicken is is fully cooked through.

Take the pan off the heat and add in the remaining yoghurt. Season to taste and serve your tasty butter chicken with any leftover chillies and garam masala.
