Easy dinners: Jamie Oliver’s peanut butter chicken uses 5 ingredients


Grilled chicken is a versatile favourite that can be elevated with the right flavours and techniques.

Jamie Oliver uses this protein-packed ingredient to create a “zingy” and creamy dish that has a slight “kick” to it too.

The popular chef and restaurateur shared his 12-minute peanut butter chicken recipe on his official website for a quick midweek meal idea.

The recipe, from his 5 ingredients – Quick & Easy Food cookbook, is branded “not too tricky” and serves two.

This simple combination will have you enjoying a deliciously vibrant meal in no time and is also ideal for barbecue days.

Ingredients

Two 120g free-range skinless chicken breasts

Two limes

Four cloves of garlic

Two heaped tablespoons peanut butter

One or two fresh red chillies

Method

Start by preheating your grill to medium-high.

Score the chicken breasts in a criss-cross pattern, then rub them with one tablespoon of olive oil, a pinch of sea salt, black pepper, and the finely grated zest of one lime.

Place the chicken, criss-cross side down, into a cold 26cm non-stick ovenproof frying pan and heat it on medium-high.

While the chicken cooks, peel and finely grate some garlic into a bowl.

Squeeze in the juice of 1½ limes, stir in the peanut butter, and add enough water to achieve a smooth, spoonable consistency.

Finely slice the chilli and incorporate it into the sauce according to your heat tolerance. Taste the sauce and adjust the seasoning as needed.

Once the chicken is ready, flip it over, spoon the sauce on top, and transfer it to the grill, positioning it about 10cm from the heat for roughly five minutes, or until thoroughly cooked and nicely charred.

Finish by grating the remaining lime zest over the top and drizzling with one teaspoon of extra virgin olive oil. Serve with lime wedges for an extra burst of flavour.
