Recipe: Banana bread cookies are ‘irresistible’ and ‘wholesome’


Banana bread has become a staple sweet treat in many people’s baking repertoire and can be enjoyed anytime.

This recipe with a twist is no different. It is described as “irresistible” and “ideal for a quick snack or “a wholesome breakfast”.

Isabella from Isabella’s Recipes shared the unique formula online. It blends the best flavours of traditional banana bread with the texture of a soft yet crisp cookie.

Moreover, the cookies are packed full of nutritional ingredients, such as bananas, nuts, oats, and store-cupboard staples.

They are super quick to make, too, with just 10 to 12 minutes of baking time required.

Banana bread cookie recipe

Ingredients

Two ripe bananas, mashed

One cup whole wheat flour

Half a cup of rolled oats

One-quarter cup of honey or maple syrup

One-quarter cup melted coconut oil

One tsp vanilla extract

Half tsp cinnamon

One-quarter tsp salt

Half cup walnuts or chocolate chips (optional)

Method

Start by preheating the oven to 175C (350F). Then, prepare a large baking tray by greasing it with a little butter and laying one sheet of parchment paper on top.

In a large mixing bowl, blend the mashed bananas, honey (or syrup), melted coconut oil, and vanilla extract until the mixture is perfectly smooth.

Now combine the dry ingredients (whole wheat flour, rolled oats, baking soda, cinnamon and salt) in a separate mixing bowl. Gradually add the dry mixture to the bowl of wet ingredients, stirring gently until just combined.

Fold in the walnuts or chocolate chips if using, then spoon the dough into equal portions (around one tablespoon each) and place on a baking tray.

Keep the cookies spaced around two inches apart to ensure they have room to expand. Bake for 10 to 12 minutes in the hot oven or until the edges turn golden.

Allow the cookies time to cool slightly before tucking into them.
