How to make the most delicious cookies with added £1 ingredient


Cookies are delicious because of their flavour, texture and ability to satisfy the sweet tooth.

They’re super versatile and you can add chocolate chips, chocolate chunks or even sweets for added texture and sweetness.

There are so many recipes online which can all produce different results, so it can be hard to know which one to try.

After having tried so many recipes over the years, I’ve settled on one which I’ve been baking for years, and it’s by Jane’s Patisserie.

She’s been my favourite baker for so many years and recommends adding one ingredient to her cookie recipe for a gorgeous texture.

Ingredients:

125g unsalted butter

100g light brown sugar

75g white granulated sugar

One medium egg

One teaspoon of vanilla

275g plain flour

One tablespoon of cornflour

One and a half teaspoons of baking powder

Half a teaspoon of bicarbonate of soda

Half a teaspoon of sea salt

300g milk chocolate chips

Method:

Start by creaming together the butter and sugars until light and fluffy.

Add in the egg and beat again. If using vanilla, add it into the mixture now.

Now it’s time to add in the plain flour, cornflour, bicarbonate of soda, baking powder and salt.

The cornflour adds a soft, tender and slightly lighter texture to cookies and makes all the difference in my opinion.

Mix the dry ingredients before beating in the chocolate chips until a cookie dough is formed.

Weigh the cookies at 60g each and place them in the freezer for 30 minutes or the fridge for one hour to set.

Preheat the oven to 200C regular or 180C Fan and line baking trays and place the cookie dough balls onto the trays.

Bake for nine minutes before leaving them to cool on the trays, they will come out of the oven soft but they firm as they cool.

I will never make any cookie recipe as the addition of cornflour in this one makes them taste delicious and I was get compliments on how they taste.
