I made Meghan Markle’s ‘filthy, sexy mush’ pasta recipe that takes four hours to cook


In the years before she married Prince Harry, Meghan Markle was something of a food influencer, and regularly shared recipes and restaurant recommendations with her fans.

Many of her recipes she shared on her blog, The Tig, while others she revealed during appearances on cooking segments on TV, and one that caught my eye recently was a pasta sauce that the former actress referred to as “filthy, sexy mush.”

Long before she became a Royal, Meghan spoke to the foodie publication Delish, sharing what she would typically eat in a day. It was here that she first shared her pasta sauce recipe.

She told the outlet that you just cook courgette, a bouillon cube, and some water for four to five hours until it breaks down into a “filthy, sexy mush”, adding: “The sauce gets so creamy, you’d swear there’s tons of butter and oil in it, but it’s just zucchini, water and a little bouillon.”

Prior to reading this recipe, I’d never heard a pasta sauce referred to as “filthy” or “sexy,” and “mush” did not sound particularly appetizing either, but nevertheless, I decided to give it a go.

Meghan’s pasta recipe was quite easy to prepare, given that I needed to buy just two ingredients. Both are readily available in any grocery store and are not particularly expensive either.

A pack of three courgettes costs just £1.39, and a pack of bouillon cubes costs between £1.65 and £1.85, depending on whether they’re vegan or meaty. Being a vegetarian myself, I opted for the vegan option.

At first, I was somewhat sceptical of the claims that these two ingredients, along with some water, would lead to a delicious pasta sauce – and my scepticism only increased as the hours went by with the courgette on the stove.

But, when it came time to plate the pasta and sauce, I was pleasantly surprised at how it tasted. And while I wouldn’t go as far as to describe the pasta as “sexy” or “filthy”, “mush” was quite an accurate description of the sauce.

This is a recipe I’ll definitely make again, although I may experiment with it further. Many recipe writers online shared that they added onion to the courgette mush, which took the dish to an even higher level.

Ingredients (Serves Two)

  • Three courgettes, chopped into cubes
  • 120ml of water, plus more if needed
  • One bouillon cube
  • Your choice of pasta

Method

I started by boiling the water, but others who have tried the recipe have opted to put the water in the cold, so this is really up to you.

Place the chopped courgettes, water, and bouillon cube in a lidded pan and set to low-medium heat for four hours, stirring occasionally. Add more water if needed.

When the courgette has about 20 minutes left, put the pasta on to cook in boiling water with a pinch of salt.

Once the courgettes and pasta have finished cooking, mix them together and serve in pasta bowls.
