As the UK waits for warmer weather, staying at home, eating a warm meal, and relaxing in front of the TV can feel extremely comforting.
Making a chicken casserole typically takes all day as the meat is slowly cooked to become incredibly tender.
However, thanks to Nagi – the clever home cook from RecipeTin Eats – a delicious chicken casserole can be cooked in as little as 50 minutes.
Plus, preparing the dish takes only 15 minutes, making it a super simple and easy meal to make.

Method
Place oil and bacon in a large, heavy-based casserole pot over high heat. When the oil is hot and the bacon releases some fat, add the chicken, season with salt and pepper, and cook until the meat is browned.
Add the garlic and onion and cook for one minute. Then add the celery and carrots and cook for two minutes.
Add the red wine, simmer rapidly for two minutes (until the wine’s smell has evaporated), and then mix in the flour.
Slowly pour in the beef stock while stirring, then add the tomato, Worcestershire sauce, thyme, bay leaves, salt and pepper. Cover the casserole pot with a lid and simmer for around 30 minutes.
Once the half hour is up, add the mushroom and green beans, then simmer without a lid for 10 more minutes.
Serve the delicious chicken casserole with parsley, if desired, crusty bread, and mash (if you wish).
