I made Jamie Oliver’s pancake recipe in 15 minutes – they were delicious


Not being much of a cook, the idea of flipping pancakes on Pancake Day fills me with dread. On Pancake Day, Britons traditionally eat crepes, which are super thin pancakes usually topped with lemon and sugar, golden syrup, and other sweet toppings. However, crepes are traditionally thin and require flipping to ensure they don’t tear – a skill I was not confident I could master.

Instead, I decided to try making American-style pancakes that required just three ingredients – flour, milk and one egg. I came across this simple 15-minute recipe on Jamie Oliver’s website and was surprised at how easy it seemed.

Named ‘Buddy’s One-cup Pancakes’, the recipe doesn’t require weighing scales but a simple measuring cup to weigh all the ingredients.

The recipe description reads: “Fluffy, soft and easy to make, this method uses a cup instead of weighing scales to keep things nice and simple. Get creative with your toppings, and enjoy! Breakfast never looked so good.”

As the recipe doesn’t include sugar, I decided to sweeten my pancakes by adding a few chocolate chips to the batter – and the end result was delicious. The chocolate chips melt while the batter cooks, which means each bite has a rich, chocolatey burst of flavour.

I also topped mine with maple syrup and more chocolate chips to ramp up the indulgence.

However, these pancakes would taste equally delicious, topped with banana, mixed berries, yoghurt, runny honey or any other toppings you desire.

How to make Jamie Oliver’s 10-minute pancakes

Ingredients

  • One cup of self-raising flour
  • One cup of semi-skimmed milk
  • One large free-range egg
  • Unsalted butter or olive oil for frying

Method

1. Fill the measuring cup with the flour and tip into a large bowl or measuring jug. I used a large measuring jug to easily pour the batter into the frying pan. Fill the same cup with milk and pour that into the bowl or jug, then crack in the egg. Whisk everything together until it’s smooth.

2. Next, place a non-stick frying pan on medium heat. Once hot, add your butter or oil. I used butter because I wanted mine to have a rich flavour. Once the butter melts and starts to sizzle, it’s time to start adding the batter. Add a large spoonful to the pan at a time. These pancakes will need to be cooked in batches. I poured mine into the pan, resulting in large pancakes.

3. Once the batter is poured, wait for small bubbles to appear on the surface of the pancakes. This is when I added my chocolate chips to the batter. When the bubbles have appeared, flip them over to cook the other side. The pancakes should be golden brown on each side.

4. Wipe out the pan with some kitchen paper, then add another small knob of butter and cook the next batch.

5. Serve the pancakes immediately with your preferred toppings.
