Salmon will taste much better with 2-ingredient ‘herby and zesty’ marinade


Whether eaten for lunch with rice or for dinner with potatoes, salmon is a delicious food which is high in omega-3. However, it can be tricky to know what sauce or seasoning to pair with the fish, meaning it can end up being a little tastless.

Luckily, experts from the BBC Good Food team have shared a super simple recipe that helps to spruce up the fish, and it only requires a few ingredients that you may already have in your cupboard. It also takes just 25 minutes to marinate, prep and cook the salmon, so it’s perfect for a quick, easy dinner. The recipe notes said: “A herby and zesty salmon dish that’s high in omega-3s – you could barbecue or grill it.”

Ingredients:

Zest and juice of one large lemon

Half a pack of fresh tarragon, finely chopped

Two tablespoons of olive oil

Four boneless salmon fillets

Method:

Make the sauce by putting the lemon zest and juice, tarragon and olive oil into a shallow dish and stir together.

Season to taste with some salt and freshly ground black pepper before adding in the salmon fillets.

Turn them to coat in the mixture, rubbing it into the fish well. Cover and set aside to marinate for 10 minutes.

Remove the salmon from the marinade and wrap it in foil if barbecuing. Cook for five to eight minutes over hot coals until just cooked through.

Alternatively, heat the grill to high and put the salmon fillets on a baking sheet.

Grill the salmon fillets for seven to 10 minutes, until just cooked through, serving it with couscous and rocket salad.

Although simple, lemon and tarragon work beautifully with delicate fish like salmon, adding a subtle but effective flavour.
