While a roast dinner is certainly delicious, the size of the meal can lead to plenty of leftovers.
If you don’t want to throw these away and waste them, it can be rather tricky to decide just what to do with them.
In her recipe book, How To Make Anything In An Air Fryer, chef and food influencer Hayley Dean has shared a simple recipe for making a Yorkshire pudding wrap with these leftovers.
While Hayley’s recipe calls for roast beef (a recipe for which is also in the book) it can be made with any meat or veg you may have after enjoying a roast dinner.
Ready in just 20 minutes in the air fryer, these delicious Yorkshire pudding wraps use just a few ingredients – and taste best when smothered in leftover gravy.
Yorkshire Pudding Wrap
Ingredients (Serves one)
For the Yorkshire pudding wrap:
- 1 egg
- 70ml semi-skimmed milk
- 30g plain flour
- 15 sprays vegetable spray oil
- Salt and freshly ground black pepper
To serve:
- 1 tablespoon horseradish sauce
- 2 slices of roast beef
- 4 roast potatoes
- Your favourite gravy
Method
Place the egg, milk and flour in a bowl and whisk together until smooth. Season with a pinch each of salt and pepper. Set aside the batter to rest for at least 30 minutes or in the fridge overnight.
Preheat the air fryer to 180°C.
Use a foil tray or cake tin that will fit into your air fryer. Add the vegetable oil to the tray and place in the air fryer for 5 minutes to heat up.
Pour the batter into the tray. It should sizzle. Cook in the air fryer at 180°C for 20 minutes. Do not open the air fryer during this cooking time.
Take the Yorkshire pudding out of the air fryer. Turn it over and flatten it down. Spread the horseradish sauce over the flattened Yorkshire pudding, then fill with the sliced roast beef, roasties and gravy.
Roll up and wrap the ends in foil. Serve with a jug of extra gravy to pour over.
