Nigella Lawson’s ‘cheesecake in a glass’ is the perfect summer dessert


‘Cheesecake in a glass’ is the ideal summer dessert for those blessed with an unpredictable sweet tooth or unannounced guests.

It requires little to no cooking talent, uses basic and minimal ingredients, and is served in pretty cocktail glasses.

On her website, celebrity chef Nigella Lawson said: “This is the perfect end to a midweek dinner or any impromptu eating occasion when prep time is scant to non-existent.”

The cheesecake takes less than 15 minutes to come together, and is extremely versatile.

Not only can you swap out the strawberries for your favourite fruit, you could also replace it with crushed Oreos or Nutella, for those with an affinity for chocolate.

Method

Dice your strawberries into tiny cubes and add them to a bowl. Drizzle some caster sugar onto the fruit and cover the container. Shake the bowl a couple times to evenly distribute the sugar, and then leave the berries to macerate.

Now put the biscuits in a freezer bag, and bash them until the crumbs are fine and powdery.

Take a separate bowl and add the cream cheese and icing sugar. Gently whisk by hand, before adding the vanilla extract, cream, and lemon juice. Whisk further to combine, until the mix is light and creamy.

For serving, pick four glasses. “A small martini glass makes these look the prettiest,” noted Lawson.

First add the biscuits to the bottom of these glasses, followed by the cream cheese mixture, and finally top it off with the now-macerated strawberries.

If you’re preparing the dessert in advance, the chef advised: “Simply leave the glasses in the fridge, layered up with the digestive crumbs and cream cheese mixture and cover with clingfilm, topping with the strawberries on serving.”
