Autumn is a great time to stay cosy indoors and bake, but you do not need a complicated recipe or a long shopping list of ingredients to make something tasty.
Mary Berry’s open apple pie only needs six ingredients and is incredibly easy to bake from scratch using this simple recipe.
In her cookbook ‘Mary Makes It Easy’, the baker said: “This is so impressive but very quick! A delicious cheat.”
This seasonal dessert only takes around 10 minutes to prepare before it goes in the oven for 35 to 40 minutes so you can have it made in less than an hour.
This recipe is so straightforward that it is great to make with children and is the perfect dessert to have with a cup of tea to keep yourself warm now that the weather is getting colder.
Method
To begin, preheat the oven to 220C (200C Fan or Gas Mark 7), then place a baking tray into the oven to heat up
Prepare the apples and pears by peeling, coring and then roughly cutting them up. Place the diced pears and apples into a bowl. Add the lemon curd and mix until the fruit is fully coated.
Roll the pastry out onto a clean counter and work until it forms into a circle. Trim to around 33 centimetres, then lift the pasty onto a sheet of baking paper.
Pour the apple and pear mixture into the centre of the pastry. Spread the mixture out slightly but leave a 7.5 centimetre border around the edge of the pastry.
Beat the egg in a small bowl and brush the edge of the pastry with the beaten egg, then fold the pastry over and tist the pasty to make a border.
Brush the pasty with more beaten egg then sprinkle demerara sugar all around the fruit and pastry.
Carefully take the baking sheet out of the oven with oven mitts, then lift the baking paper onto the hot baking sheet.
Bake the apple pie in the oven for 35 to 50 minutes until everything is crispy, golden and looking utterly delicious.
