We all lead busy lives, and spending hours in the kitchen rustling up something to eat just isn’t something many people want to do. Most of us would love to eat something that takes just a few minutes to cook, but this often means compromising on how healthy the dishes are – especially if we’re resorting to ready meals.
But cooking doesn’t have to mean standing over a hot stove for hours. If you own a slow cooker, you can make delicious meals that you can leave cooking while you work or complete any errands you desperately need to do.
What’s more, using a slow cooker often means that’s the only dish you need to cook your meal in – so it saves you time on washing up after dinner, too, as you don’t have to clean every utensil you own.
One slow cooker dish that’s been going viral recently is a one-pot “deconstructed” lasagne that takes all the elements of the traditional Italian dish, and puts them all in one slow cooker for maximum efficiency.
What’s more, the recipe – which was shared online by Eennie Higgins – contains just 495 calories per portion, as well as 45g of protein. The dish serves four, and you can even treat yourself to a slice of garlic bread for a total of 576 calories.
Eennie did not share the exact quantities of ingredients in her TikTok video but did clarify some of the measurements in the comments of her video after those eager to make the recipe asked for guidance.
In the caption of her video, she wrote: “Including parmesan, [this is] 495 calories and 45g protein. Who doesn’t love lasagne? I added a slice of garlic bread, bringing it to 576 calories – but totally worth it!”
Method
Cooking this “deconstructed” lasagne couldn’t be easier. Start by putting everything except the lasagne sheets and the Philadelphia into your slow cooker and mixing it together. In the comments, Eennie explained she cooked this mixture on her slow cooker’s high setting for four hours, but you could also do it on low for seven or eight hours, depending on your needs.
When your mince and tomato mixture has cooked, chop up your lasagne sheets into small squares and add to the slower cooker along with the Philadelphia cheese. Stir these into the sauce and cook for another 15 minutes, or until the pasta is cooked through.
Eennie said her pasta was fresh, so it only took around 15 minutes. If you use dry pasta sheets, you may need to leave it for up to 45 minutes before it’s fully cooked.
Once everything is cooked, split into four portions and serve with a slice of garlic bread, if desired. This meal can also be frozen and reheated if you don’t plan on serving all four portions at the same time.
