This air fryer muffin recipe is perfect for when you don’t feel like using the oven but crave a sweet breakfast or teatime treat. Requiring just 10 minutes of prep, this recipe keeps things simple with a handful of basic ingredients, including your favourite toppings. Serving six to eight, this air fryer method guarantees perfectly risen muffins for the whole family with minimal effort.

BBC Good Food shared this easy air fryer bake, saying: “Make beautifully golden brown muffins in your air fryer in no time. Add blueberries, chocolate chips or dried fruit, whatever you like. You can even double the mixture to make more.”

Method

Preheat the air fryer to 160C for two minutes. In a spacious mixing bowl, whisk together the oil, yoghurt, egg, and milk until well combined.

Gradually incorporate the sugar, flour, and bicarbonate of soda, stirring thoroughly to create a smooth batter. If desired, gently fold in blueberries, chocolate chips, or dried fruit.

Carefully distribute the mixture into silicone muffin cases or a muffin tin lined with paper cases, ensuring each is filled to about three-quarters of its capacity.

This recipe should yield between six and eight muffins, though you may need to bake them in multiple batches.

Bake for approximately 12 to 15 minutes, or until the muffins develop a golden-brown exterior and a skewer inserted into the centre emerges clean.
